Quinoa Spinach Salad

Ingredients:

  • ½ cup uncooked quinoa
  • 2 cups spinach, finely chopped
  • 1 tomato, diced
  • ¼ cup raisins
  • 1 and ½ tbsp. lemon juice
  • 1½ tbsp. extra-virgin olive oil
  • ¼ tsp. salt
  • ¼ tsp. ground black pepper

Directions

In a medium bowl, rinse the quinoa a few times. In a medium saucepan, boil 2 cups of salted water. Add the quinoa and continue to boil for about 10 minutes until the quinoa is tender. Drain the quinoa and let it cool.

In a large bowl, combine the spinach, tomatoes, cucumbers, raisins and cooled quinoa.

In a small bowl, make your lemon vinaigrette. Combine the lemon juice, olive oil, salt and pepper. Pour onto the salad and toss to coat. Season to taste with more salt and pepper, if needed.

Baked Halibut Over Orzo and Spinach

Ingredients:

  • 4 tablespoons extra-virgin olive oil, divided
  • 2 tablespoons fresh lemon juice
  • 2 6- to 7-ounce halibut fillet
  • 1 cup orzo (rice-shaped pasta)
  • 1 garlic clove, minced
  • 4 cups (packed) baby spinach
  • 1 cup halved cherry tomatoes

Directions

Preheat oven to 425°F. Whisk 2 tablespoons oil and lemon juice in bowl; season dressing with salt and pepper. Place halibut on rimmed baking sheet; sprinkle with salt and pepper. Drizzle with some of dressing. Bake until just opaque in center, about 12 minutes.

Meanwhile, cook pasta in large saucepan of boiling salted water until tender but still firm to bite; drain. Add 2 tablespoons oil and garlic to same saucepan; sauté over medium heat 1 minute. Add drained pasta, spinach, and tomatoes; stir to coat. Season with salt and pepper. Remove from heat. Cover; let stand 1 minute (spinach will wilt). Divide pasta between 2 plates. Top with halibut and remaining dressing.

Spinach and French Feta Frittata

Ingredients:

  • ½ cup crumbled French feta cheese (this cheese is creamier and much less salty!)
  • 1 red bell pepper
  • 4 tablespoons extra-virgin olive oil
  • 1 bunch scallions, sliced
  • 1 5-ounce package baby spinach
  • Kosher salt and freshly ground pepper
  • 8 large eggs
  • 4 tablespoons gluten free or whole-wheat breadcrumbs

Directions

Preheat the oven to 450 degrees F. Place the bell pepper directly on a stove top gas burner over high heat and char on all sides, turning with tongs, about 5 minutes. (If you don’t have a gas stove, do this on a baking sheet under the broiler.) Transfer the pepper to a medium bowl, cover tightly with plastic wrap and let sit 10 minutes.

Meanwhile, heat 2 tablespoons olive oil in a medium nonstick ovenproof skillet over medium-high heat. Add the scallions and spinach and cook, stirring, until wilted, about 4 minutes. Stir in 1/2 teaspoon salt, and pepper to taste; remove from the heat. Whisk the eggs, 2 tablespoons breadcrumbs, 3/4 cup water and 1/2 teaspoon salt in a large bowl. Add the egg mixture and feta to the skillet and stir to combine. Sprinkle with the remaining 2 tablespoons breadcrumbs. Transfer the skillet to the oven and bake until the frittata is set and the top is golden, about 15 minutes.

While the frittata is cooking, peel off the skin from the roasted red pepper with your fingers. Cut the pepper in half, discard the seeds and slice into strips. Toss with the remaining 2 tablespoons olive oil, and salt and pepper to taste in a bowl. Slide the frittata onto a serving plate and cut into wedges. Serve with the roasted pepper.

Ingredients

  • 3 tablespoons lemon juice
  • ½ teaspoon lemon rind
  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon chopped fresh tarragon or 1 teaspoon dried
  • ½ teaspoon salt
  • &frac14 teaspoon ground pepper
  • 8 cups baby spinach
  • 2 heads Belgian endive, cored and sliced
  • 1 14-ounce can hearts of palm (see Tips), rinsed, halved lengthwise and sliced
  • 2 hard-boiled eggs (see Tips), chopped
  • ½ cup thinly sliced red onion

Directions

Whisk lemon juice, lemon rind, oil, tarragon, salt and pepper in a large bowl. Add spinach, endive, hearts of palm, eggs and onion; toss to coat.

Spinach & Mushroom Frittata

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 10oz bag pre-sliced mushrooms
  • 1 16oz bag spinach
  • kosher salt and freshly ground pepper
  • 2 garlic cloves, minced
  • 6 whole eggs and 4 egg whites
  • 1/4 cup grated Paresan
  • 2-3 tablespoons low-fat milk

Directions

Heat 1 tablespoon of the olive oil over medium-high heat in a 12-inch nonstick skillet and add the mushrooms stirring and tossing often. Cook about 3-4 minutes until they begin to sweat. Add salt, pepper and garlic and stir together until the garlic is aromatic. Cook no more than 1 minute. Add the spinach a 1 cup at a time and stir until wilted. Turn up the heat and let any excess liquid evaporate from the pan, then remove from the heat.

Beat the eggs in a large bowl. Stir in salt and pepper to taste. Add the milk and mushroom mixture. Add Parmesan and stir.

Heat the remaining olive oil over medium-high heat in the skillet until hot. Pour in the egg mixture, scraping all of it in with a rubber spatula. Swirl the pan and distribute the eggs and filling evenly. Shake the pan gently, tilting it slightly with one hand while lifting up the edges of the frittata with the spatula in your other hand, to let the eggs run underneath during the first few minutes.Once a few layers of egg have cooked, then turn off the heat down to low, cover. Cook 10 minutes shaking the pan once in a while to loosen the eggs at the bottom of the pan. Tilt the pan so that the bottom doesn’t burn. It will turn golden brown. The eggs should be done although the top layer will not. Heat the broiler and place frittata on the top for 1-2 minutes. Watch closely because you do not want to burn. Remove from heat and allow to cool for a few minutes. Loosen the edges with a spatula and carefully slide off of the pan and cut into wedges.
