Parmesan Herb Roasted Cauliflower

Ingredients:

  • 1 head of cauliflower
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon dried marjoram
  • ¼ teaspoon salt
  • pepper to taste
  • 2 tablespoons balsamic vinegar
  • ½ cup freshly grated Parmesan cheese

Directions

Preheat oven to 450°F. Toss cauliflower, oil, marjoram, salt and pepper in a large bowl. Line a baking sheet with foil. Spread on a large rimmed baking sheet and roast until starting to soften and brown on the bottom, 15 to 20 minutes. Toss the cauliflower with vinegar and sprinkle with cheese. Return to the oven and roast until the cheese is melted and any moisture has evaporated, 5 to 10 minutes more.

Roasted Acorn Squash

Ingredients:

  • 1 medium acorn squash (about 1 pound)
  • 1 tablespoon unsalted butter, cut into 4 pieces and at room temperature
  • Kosher salt
  • Freshly ground black pepper
  • 2 teaspoons packed light or dark brown sugar

Directions

Heat the oven to 400°F and arrange a rack in the middle. Cut the squash in half lengthwise and scrape out the seeds. Cut a small slice off the rounded side of each half to stabilize the halves so they sit upright.

Using your fingers, coat the flesh of each half with 1 piece of the butter, then season generously with salt and pepper. Divide the sugar and remaining butter pieces among the squash cavities. Place the halves cut-side up on a baking sheet. Roast until fork-tender, 45 minutes to 1 hour.

Roasted Baby Potatoes

Ingredients

  • 1/2 bag of baby red potatoes
  • 1/2 tablespoon dried rosemary
  • 1/2 tsp garlic powder
  • 2 tablespoons EVOO
  • 1/4 tsp salt pepper to taste

Directions

Preheat oven to 450 degrees. Slice each potato in half. Mix all ingredients together. Be sure to pinch the rosemary in the palm of your hands to release flavor before adding to the rest of the ingredients. Give everything a toss together and spread the love. Line a cookie sheet with foil. Bake 15 min and then toss. Bake another 10 min.
Serve!
